Zucchini Tamales

These tamales are vegan, and very tasty!  Use a standard masa recipe, but substitute lard for coconut oil.  It works beautifully.  For this version:  You’ll need masa, corn husks, coconut oil, a good-sized red onion, zucchinis, corn, and green chile.  I also used a dollop of chipotle paste in the filling.  Use you fingers to spread the masa on the corn husks.  … After you’ve steamed the finished tamales for about an hour, top them off with some Salsa Fresca.  Cheers!
